1 kg of potatoes
1 teaspoon of blackpepper
1 teaspoon of cayenne pepper
Lime juice
1/4 egg yellow food colour
1 litre of vegetable oil
1 & 1/2 cup of all purpose flour
Water
Salt to taste
Method
Wash the unpeeled potatoes. In a sufuria add water and boil the potatoes until they are soft and they start to peel off. Remove from the heat and peel off the skin completely and set aside.
In a separate bowl add in flour, salt, yellow food colour and water. Mix together using a whisk until it is soft and there is no lumps.
In a small bowl make chill filling, add cayenne pepper, lime juice and salt and set aside.
Cut the potatoes into two, fill in between with chill filling and sandwich them back. Repeat the same process for the rest of the potatoes.
In a frying pan over medium heat, pour in the vegetable oil. Dip and coat the potatoes in the bowl with flour and food colour mixture.Deep fry the coated potatoes until crispy.
Serve with ukwaju sause and hot coffee/ tea.
