Garlic and Coconut Milk Matoke


Ingredients 

10 matokes.                                        
5 potatoes 
Half Pumpkin 
1 cup of light coconut milk
1/2 cup of strong coconut milk(tui)
5 cloves of garlic,minced 
1/2 tsp of blackpepper
1 large onion
Coriander leaves
3 tomatoes
1/2 tsp of curry powder 
1/2 tsp of paprika 
Vegetable oil for frying 
Salt to taste 


Method
Peel and wash the Matokes,potatoes and pumpkin then slice them up and put them on a bowl. In a sufuria,add the onions ,oil, garlic and blackpepper .Let this cook. 
Once they are cooked add tomatoes, salt and all the spices, let this cook for about 5 minutes. 
Once they are cooked, add your chopped matokes,potatoes, pumpkin and the light coconut milk. Once the Matoke is 3/4 way done, add the strong coconut milk. Then let it simmer for 2-3 minutes. 
Serve while hot ☺

Garlic potato wedges

INGREDIENTS 1.5 potatoes 2.6 cloves of garlic  3. 1/2 tsp of blackpepper  4. 1/2 tsp of paprika  5. 1/2 tsp of cumin 6. 1/2 tsp of cayneen pepper  7. One bunch of coriander leaves 8. Salt to taste  9.1/4 cup of flour  10. 1/2 cup of water 11. Vegetable oil  METHOD Peel off the potatoes and wash them. Slice the potatoes to wedges. Boil the potatoes for 5 minutes until they are half cooked 50% .In a separate bowl add flour, paprika, blackpepper, salt, cayneen pepper and cumin. Pour in the boiled potatoes into the paste then mix until the potatoes are well coated with the paste. Heat the oil in a deep frying pan. Once the oil is hot, dip the potatoes and fry them until golden brown.  In a separate bowl add garlic and 2tbsp of oil ,place the bowl to a microwave for 1 minute. Then pour the fried potatoes to the garlic bowl. Mix the potatoes well with the garlic . Garnish with coriander leaves. 

Potato Bajias

INGREDIENTS 1. 6 large potatoes  2. 2 cups of flour  3. 1 tsp black-pepper  4. Dhania 5. Salt to taste  6. Food colour(egg-yellow) 7. Vegetable oil for frying  METHOD Wash and peel off the potatoes. Thinly slice the potatoes into oval shape. In a separate bowl add in flour, water, food colour,dhania, black-pepper and salt. Whisk all the ingredients untii the paste becomes smooth. Add in the sliced potatoes to the paste. Mix the paste with the potatoes  together with a spoon until the potatoes are coat with the paste.  Heat the oil in a frying pan then deep the potatoes into the oil until they are crunchy and cooked.
