Soft layered chapatis

Ingredients 
6 cups of flour 
2 tsp of salt
1 tsp of sugar 
3 spoons of oil
Warm water

Method
In a large bowl, pour in flour, salt sugar and oil. Then mix the ingredients together. Add water and start to knead the dough. Knead until it becomes soft. Place the dough on a flat surface knead until it softens up. Cover the dough with clean kitchen towel and let it rest for an hour or two. 

After divide the dough into 10 - 15 equal parts making small ball like shapes. Arrange them in a flat surface dusted with flour. Cover with a kitchen towel to avoid drying up. 

Dust flour  a flat surface and take one of the balls and start rolling with a rolling pin to a circular shape. In a hot pan , place the rolled out circular chapati and fry both sides with little oil  on medium heat until it becomes golden brown. Place your cooked chapati on a flat plat and cover with aluminum foil. 
Repeat this process for the rest of remaining balls of dough.

Add in the turmeric,curry powder and salt to taste, mix and stir. Heat the oil in a frying pan . Scoop the mixer using a tablespoon and fry them until golden brown.

Mahamri

  Ingredients *4cups of all purpose flour *2cups of coconut milk *1/2 cup of sugar *1 tsp of cardamon *1tsp of instant yeast * oil for frying Method In a bowl pour in the 4 cups of flour. Add in the yeast and mix with the flour  until its evenly. Add in the cardamon and sugar to the flour then mix the ingredients well. Pour in the coconut milk to the flour then start to knead slowly until the dough becomes softly. Cover the dough with some cling film then on top with a clean piece of cloth and allow it to rest for about 45minutes.  After 45minutes take the dough and divide it to small balls. Take a piece of the ball roll it and cut to small four shapes. Heat the oil using medium heat. Once the oil is hot, fry the mahamris. Serve and enjoy with some hot 😋

Garlic potato wedges

INGREDIENTS 1.5 potatoes 2.6 cloves of garlic  3. 1/2 tsp of blackpepper  4. 1/2 tsp of paprika  5. 1/2 tsp of cumin 6. 1/2 tsp of cayneen pepper  7. One bunch of coriander leaves 8. Salt to taste  9.1/4 cup of flour  10. 1/2 cup of water 11. Vegetable oil  METHOD Peel off the potatoes and wash them. Slice the potatoes to wedges. Boil the potatoes for 5 minutes until they are half cooked 50% .In a separate bowl add flour, paprika, blackpepper, salt, cayneen pepper and cumin. Pour in the boiled potatoes into the paste then mix until the potatoes are well coated with the paste. Heat the oil in a deep frying pan. Once the oil is hot, dip the potatoes and fry them until golden brown.  In a separate bowl add garlic and 2tbsp of oil ,place the bowl to a microwave for 1 minute. Then pour the fried potatoes to the garlic bowl. Mix the potatoes well with the garlic . Garnish with coriander leaves.
