Thyme Chicken

Ingredients  5 pieces of chicken  1 teaspoon of thyme 1/2 teaspoon of chicken masala Soya sauce  Vegetable oil for frying  Salt to taste  Method Heat your frying  pan with a little oil over medium heat. Add in the pieces of chicken. Pour in thyme and chicken masala top of the chicken. Fry the the chicken while turning them so as they can cook on both sides.pour in a bit of soya sauce into the chicken. Fry to about 5-10 minutes.  Serve while hot đŸ”„ 

French Crepes

Ingredients  4 cups of all purpose flour  2 cups of milk  4 eggs  1/2 cup of sugar Vegetable oil for frying  Method In a small bowl beat the eggs. In a separate large bowl add in flour, sugar, milk and the eggs then beat the mixture using a whisk until smooth. Heat the frying pan with a little bit of oil over medium heat. Pour or scoop the batter crepes into the pan using a spoon. Rotate the pan to spread the batter crepes as thinly as possible. Cook for 1-2 minutes. Brown on both sides serve while hot with tea or coffee. 

Garlic and Coconut Milk Matoke

Ingredients  10 matokes.                                         5 potatoes  Half Pumpkin  1 cup of light coconut milk 1/2 cup of strong coconut milk(tui) 5 cloves of garlic,minced  1/2 tsp of blackpepper 1 large onion Coriander leaves 3 tomatoes 1/2 tsp of curry powder  1/2 tsp of paprika  Vegetable oil for frying  Salt to taste  Method Peel and wash the Matokes,potatoes and pumpkin then slice them up and put them on a bowl. In a sufuria,add the onions ,oil, garlic and blackpepper .Let this cook.  Once they are cooked add tomatoes, salt and all the spices, let this cook for about 5 minutes.  Once they are cooked, add your chopped matokes,potatoes, pumpkin and the light coconut milk. Once the Matoke is 3/4 way done, add the strong coconut milk. Then let it simmer for 2-3 minutes.  Serve while hot ☺

Beef Pilau

INGREDIENTS 1/2 kg of beef 6 peeled potatoes  3 cups of rice Mixed pilau spices Vegetable oil for frying  5 Minced garlic  Ginger Water  2 large onions  Salt to taste  METHOD Grind in using a kind garlic and ginger together add salt.  In a separate sufuria, add in vegetable oil, onions and fry until golden brown.Add in peeled potatoes stir. Then add mixture that you grinded and mixed pilau spices , stir the potatoes so that they can get the flavor. Add in the beef and salt  stir and cook  Add in 3 cups of rice and 6cups of water, stir and let it cook.  Once the rice is ready serve while hot.

Matoke

ingeredints 6 matokes 3 tomatoes  1 large onion  1 green pepper  1/4 teaspoon of paprika  1 teaspoon of blackpepper 1 teaspoon of curry powder  1 teaspoon of thyme Vegetable oil to fry Salt to taste  Method Peel and slice the matokes into 3- 4 parts. Wash and boil the matokes until they are soft. Then set aside.  In a separate sufuria, add in oil and onions fry until golden brown. Add in blackpepper, paprika, curry powder and thyme., then stir. Add in tomatoes and salt , add in a bit of water while stirring. Let it to simmer for about 10 minutes.  Then add in the matokes and let it cook for 2 - 3 minutes  Serve while hot. 

Samosas

 Beef filling Ingredients 1 kg of minced meat 1 teaspoon of blackpepper Coriander leaves 3 green onions 1 teaspoon of minced garlic Lime juice  Pepper Salt to taste Method In a sufuria add in the minced meat, boil over low medium heat until its dry. To sufuria add in onions, blackpepper, garlic,lime juice, salt, pepper and coriander leaves.Stir and cook over a low medium heat for about 5 - 10 minutes. Remove from the heat and set aside. Dough pastry  Ingredients 3 cups of all purpose flour 2 teaspoons of vegetable oil Lime juice 2 cups of warm water Salt to taste Method In a bowl add in flour, water, lime juice and salt mix together. On a flat surface knead the dough until it becomes soft and no longer sticky . Lightly oil the dough and let it rest for 10 minutes.   After the rest divide the dough into 4 small  equal balls. Viazi Karai

Ingredients 1 kg of potatoes 1 teaspoon of blackpepper 1 teaspoon of cayenne pepper Lime juice  1/4 egg yellow food colour 1 litre of vegetable oil 1 & 1/2 cup of all purpose flour Water  Salt to taste Method Wash the unpeeled potatoes. In a sufuria add water and boil the potatoes until they are soft and they start to peel off. Remove from the heat and peel off the skin completely and set aside. In a separate bowl add in flour, salt, yellow food colour and water. Mix together using a whisk until it is soft and there is no lumps. In a small bowl make chill filling, add cayenne pepper, lime juice and salt and set aside. Cut the potatoes into two, fill in between with chill filling and sandwich them back. Repeat the same process for the rest of the potatoes. In a frying pan over medium heat, pour in the vegetable oil.
