Potato Bajias

INGREDIENTS 1. 6 large potatoes  2. 2 cups of flour  3. 1 tsp black-pepper  4. Dhania 5. Salt to taste  6. Food colour(egg-yellow) 7. Vegetable oil for frying  METHOD Wash and peel off the potatoes. Thinly slice the potatoes into oval shape. In a separate bowl add in flour, water, food colour,dhania, black-pepper and salt. Whisk all the ingredients untii the paste becomes smooth. Add in the sliced potatoes to the paste. Mix the paste with the potatoes  together with a spoon until the potatoes are coat with the paste.  Heat the oil in a frying pan then deep the potatoes into the oil until they are crunchy and cooked. 

Bajia za kunde(black-eyed peas)

INGREDIENTS 1.Black-eyed peas(kunde) 2.Onions 3.Bell pepper 4.Dhania 5.Garlic and ginger paste 6.Curry powder 7.Tumeric 8 .Salt to taste  METHOD Wash the black-eyed peas and soak them in water for overnight in a large bowl. In the morning, wash the black-eyed peas and remove the skin. Blend the black-eyed peas ,onions, Bell peppers, Dhania, ginger and garlic together using a blender. After, pour the mixer in a bowl. Add in the turmeric,curry powder and salt to taste, mix and stir. Heat the oil in a frying pan . Scoop the mixer using a tablespoon and fry them until golden brown.

Soft layered chapatis

Ingredients  6 cups of flour  2 tsp of salt 1 tsp of sugar  3 spoons of oil Warm water Method In a large bowl, pour in flour, salt sugar and oil. Then mix the ingredients together. Add water and start to knead the dough. Knead until it becomes soft. Place the dough on a flat surface knead until it softens up. Cover the dough with clean kitchen towel and let it rest for an hour or two.  After divide the dough into 10 - 15 equal parts making small ball like shapes. Arrange them in a flat surface dusted with flour. Cover with a kitchen towel to avoid drying up.  Dust flour  a flat surface and take one of the balls and start rolling with a rolling pin to a circular shape. In a hot pan , place the rolled out circular chapati and fry both sides with little oil  on medium heat until it becomes golden brown. Place your cooked chapati on a flat plat and cover with aluminum foil.  Repeat this process for the rest of remaining balls of dough.

Fried potatoes

Ingredients Peeled potatoes  1/2 tsp of cumin Cayenne pepper (optional)  2 green chillies Dhania 1 tsp of minced garlic  1/2 tsp of minced ginger 1/2 tsp of tumeric Lemon Vegetable oil  Salt to taste  Method Boil the peeled potatoes for 15 minutes. In your frying pan with oil, cumin ,Chillies, garlic and ginger and bit of cayneen pepper. Cut the boiled potatoes into quarters. Add the potatoes into the pan fry then sprinkle some lemon juice on top. Fry the potatoes until they become a little crispy. Garnish the potatoes with Dhania.

Thyme Chicken

Ingredients  5 pieces of chicken  1 teaspoon of thyme 1/2 teaspoon of chicken masala Soya sauce  Vegetable oil for frying  Salt to taste  Method Heat your frying  pan with a little oil over medium heat. Add in the pieces of chicken. Pour in thyme and chicken masala top of the chicken. Fry the the chicken while turning them so as they can cook on both sides.pour in a bit of soya sauce into the chicken. Fry to about 5-10 minutes.  Serve while hot 🔥 

French Crepes

Ingredients  4 cups of all purpose flour  2 cups of milk  4 eggs  1/2 cup of sugar Vegetable oil for frying  Method In a small bowl beat the eggs. In a separate large bowl add in flour, sugar, milk and the eggs then beat the mixture using a whisk until smooth. Heat the frying pan with a little bit of oil over medium heat. Pour or scoop the batter crepes into the pan using a spoon. Rotate the pan to spread the batter crepes as thinly as possible. Cook for 1-2 minutes. Brown on both sides serve while hot with tea or coffee. 

Garlic and Coconut Milk Matoke

Ingredients  10 matokes.                                         5 potatoes  Half Pumpkin  1 cup of light coconut milk 1/2 cup of strong coconut milk(tui) 5 cloves of garlic,minced  1/2 tsp of blackpepper 1 large onion Coriander leaves 3 tomatoes 1/2 tsp of curry powder  1/2 tsp of paprika  Vegetable oil for frying  Salt to taste  Method Peel and wash the Matokes,potatoes and pumpkin then slice them up and put them on a bowl. In a sufuria,add the onions ,oil, garlic and blackpepper .Let this cook.  Once they are cooked add tomatoes, salt and all the spices, let this cook for about 5 minutes.  Once they are cooked, add your chopped matokes,potatoes, pumpkin and the light coconut milk. Once the Matoke is 3/4 way done, add the strong coconut milk. Then let it simmer for 2-3 minutes.  Serve while hot ☺
